All Sugar Cookies All the Time

Happy Holidays, LGMer’s! Just wanted to pop in to say “hi,” and share some recent cooking adventures with you.

I’m not much of a baker and I’m certainly not a mixologist, so when I was searching for festive recipes, I erred on the side of “not too complicated.” That included the use of pre-formed sugar cookies in this first recipe, a sugar cookie crust, no bake cheese cake.

I wanted to make this because it seemed like a low-investment, high-reward recipe. Looks super cute and impressive–with the tree cookie base and toppers– but hard to mess up. Which is interesting, because I still managed to mess it up, by not using enough cream cheese and using the wrong size springform pan. This could have been disastrous because I was already worried the cake would be too sweet; I didn’t need another thing to worry about.

But the actual cheesecake filling is incredibly light and fluffy and the sour cream and lemon juice add a lovely tang. In addition, it’s not too sweet, so the sugar cookie crust is actually a nice bonus.

Providing I don’t space out and get the measurements and specifications right next time, I would love to give this recipe another try; it’s a definite keeper.

Next up is the Sugar Cookie Martini, another recipe I messed up, because I have a habit of reading through a recipe once or twice, thinking I have it all memorized and then finding out I…don’t.

Anyway, my assessment of this pretty simple drink: (vanilla vodka, Irish Cream and amaretto) is that’s it’s perfectly nice, but I assume it would have been better if I’d actually remembered the milk. And while I enjoyed the comically-coated rim because I am a child, I know that that will not work for lots of people.

Again, this was another dessert I expected to be super sweet, but it wasn’t. And I actually enjoyed the ridiculous icing and sprinkle rim. But, again, I am a child.

So if you feel like embracing your inner child this holiday, give these recipes a try. You could even do something crazy, like actually reading through them and following them to the letter, instead of free-balling it like I did. It’ll be a Christmas miracle.
